This mornings breakfast was almost non-existent. No time for lunch at all. This has been a very busy day. Needless to say, at suppertime tonight, I was ready for a great meal. It was decided that the grill was going to be lit, and some pork steaks were going to be the main course. After the grill was hot, I added the aluminum foil pouches that contained some sliced zucchini, carrot, and cauliflower with salt, pepper, and olive oil. I also added 6 ears of white sweet corn, still in the husk's. If you have never steamed veggies on the grill, start now. It has the most incredible flavor, and is very hard to mess up. Just keep it on the top rack, away from the direct heat. As great as my supper sounds, My post today is about dessert. It is known by many names, but my grandmother called it Watergate Salad, so that's what I call it. I looked up the name on Google and found many recipes, all different, but still containing the main ingredients. My version of the salad goes like this.....
one tub ( 8 oz ) Cool Whip
one box Jello pistachio pudding mix
one can pineapple crushed or chunks
Chopped nuts (optional ) I use the ice cream toppers
Shredded coconut ( optional ) amount depends on own taste
1 1/2 cup of mini marshmallows
1/2 cup raisins
Basically, just mix all the ingredients together and chill for about an hour. You can make it, like I did, while the grill is getting hot. Through the years, I have added many other ingredients to
this salad, including sliced apples, peaches, strawberries, blackberries, and even granola. The base recipe is easy to play with, and you can even swap the pistachio pudding. I use Jello chocolate pudding and add crumbled Oreo's and make mud pies. Add some gummi worms for the kids, and tell them it's dirt.
